Truly scrumptious two ingredient bagels

Love bagels? Love baking? Yes and yes! What if your favourite Jewish bakery sold out or you don’t live near a bakery or you don’t live in New York? Yes of course you can go to any supermarket and buy a packet but they have preservatives and other stuff in them so try our fabulous two ingredient bagels that are really, truly scrumptious.

Confession: you might want to add a couple of further ingredients such as salt and lovely seeds but that’s at your discretion this recipe is generally as advertised.

Ingredient one: cup of self-raising flour

Ingredient two: cup of Greek yoghurt – it needs to be Greek as you need thick yoghurt with as least moisture as possible.

Makes 4 bagels.

Note: You need to use the same cup size but please be aware that the size of your cup will dictate the size of your bagels so you may wish to use a mug.

Method:

Preheat oven to 180 degrees. Add a baking sheet to a large oven tray.

Mix the ingredients (and salt if desired) together in an electric mixer bowl or by hand until you have a large dough ball. Don’t over mix as the dough will become too sticky to work with. If mixing my hand add a little extra flour when needed. It’s a messy job, kids love this type of stuff if you have any who want to get involved. If your kids are like junior masterchef competitors apologies for being patronising!

Once you have your dough ball, cut it into quarters. Hand roll into a long sausage shape and then into a circle with a hole to create something resembling bagel and place on the tray. Make the hole larger than you wish as it will decrease upon baking.

If you want to add poppy seeds, dab a little water or milk to help them stick to the top and then sprinkle.

Bake in the oven for twenty minutes.

Remove from the oven.

There are a couple of options now: you can either whack the oven heat up to 280 degrees and pop them back in to get a crispy shell or we prefer to leave them and finish them off in the toaster or air fryer (yes, lockdown purchase but we love them and use them a lot!) when ready to eat them as it does the same job and makes the inside toasty too.

Serve with your favourite filling and enjoy.
